  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste

Instructions

  1. Heat 2 tablespoons of olive oil in a large pot over medium heat. Add diced onions and sauté until translucent, about 5 minutes.
  2. Add minced garlic and cook for another minute, stirring frequently to avoid burning.
  3. Place the chicken breasts or thighs into the pot and pour in the chicken broth. Bring to a gentle boil, then reduce to a simmer. Let the chicken cook for 15-20 minutes or until fully cooked.

  8. Simmer the chili for another 10-15 minutes, stirring occasionally to ensure everything is well incorporated.
