  • 1 teaspoon finely grated lemon zest
  • Pinch of salt
  • 2 tablespoons fresh mixed herbs (thyme, basil, chives), finely chopped
  • About 12 slices baguette or rustic bread, ½-inch thick
  • Olive oil for brushing
  • About 6 teaspoons honey (½ teaspoon per crostini)
  • Freshly ground black pepper to taste
  • Extra virgin olive oil for drizzling

Instructions

  1. Preheat oven to 375°F (190°C). Slice the baguette into ½-inch thick slices.
  2. Place bread slices on a baking sheet, brush lightly with olive oil, and toast for 8-10 minutes until golden and crisp but not overly browned.
  3. While bread toasts, transfer ricotta to a mixing bowl. Add lemon zest and a pinch of salt.
  4. Using a hand mixer or stand mixer on medium speed, whip ricotta for 2-3 minutes until smooth, airy, and spreadable. Add a teaspoon of milk or olive oil if too thick.
  5. Fold in the chopped fresh herbs gently. Taste and adjust salt and pepper as needed.
  6. Spread about 2 tablespoons of whipped ricotta onto each toasted bread slice.
  7. Drizzle each crostini with about ½ teaspoon honey.
  8. Finish with a light drizzle of extra virgin olive oil and a sprinkle of freshly cracked black pepper.
  9. Optionally garnish with a small sprig of fresh herb.

Notes

Whip ricotta just until airy, not stiff peaks, to avoid watery texture. Use mild honey to complement herbs and ricotta. Toast bread until golden but not burnt. Assemble crostini just before serving to keep bread crisp. Can substitute goat cheese for ricotta or use gluten-free bread for dietary needs.
