  • 1 cup fresh strawberries, hulled and sliced (150g) – frozen can be used

  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • Pinch of salt
  • 2 tablespoons heavy cream or coconut cream (optional)
  • 1 tablespoon chia seeds (optional)

Instructions

  1. Prepare the strawberries: In a small bowl, toss the sliced strawberries with 1 tablespoon of honey or maple syrup. Let them sit for 5-10 minutes.
  2. Heat the milk: Pour 2 cups of your chosen milk into a medium saucepan. Warm over medium heat until it just starts to simmer (3-4 minutes), avoiding boiling.
  3. Add oats and spices: Stir in 1 cup rolled oats, 1 teaspoon vanilla extract, 1/2 teaspoon cinnamon, and a pinch of salt. Lower heat to medium-low and cook, stirring frequently, until oats are creamy and tender (8-10 minutes).
  4. Stir in cream and chia seeds: If using, add 2 tablespoons heavy or coconut cream and 1 tablespoon chia seeds. Cook for another minute, stirring constantly.
  5. Fold in strawberries: Gently stir in the macerated strawberries with their juices until the oatmeal turns a pinkish hue.
  6. Sweeten to taste: Add extra honey or maple syrup if desired.
  7. Serve immediately: Spoon into bowls and garnish with fresh strawberry slices or a sprinkle of cinnamon.

Notes

If oatmeal thickens too much when cooling, stir in a splash of milk before serving. Stir frequently during cooking to prevent sticking and burning. Rolled oats provide the best creamy texture; quick oats can be used but reduce cooking time. For vegan version, use coconut milk and cream, and maple syrup instead of honey.
