Instructions

  1. Freeze the bananas for at least 4 hours or overnight. For quicker freezing, flash freeze slices on a parchment-lined tray for 1-2 hours.
  2. Hull and slice the strawberries. Toss with lemon juice and maple syrup or honey. Let sit for about 10 minutes to macerate.
  3. Place frozen banana slices, Greek yogurt, and vanilla extract into a blender or food processor. Pulse to break down chunks, then blend for 1-2 minutes until silky smooth, scraping down sides as needed.
  4. Spoon the creamy nice cream into serving bowls. Layer or swirl the macerated strawberries on top.
  5. In a small bowl, stir raw honey with ground cinnamon until combined. Drizzle over the nice cream and strawberries.
  6. Add optional toppings such as chopped toasted nuts, fresh mint leaves, or dark chocolate shavings.
  7. Serve immediately. Store leftovers in an airtight container in the freezer for up to 2 days. Let thaw at room temperature for 5-10 minutes before scooping.
