  • 1 cup small-curd full-fat cottage cheese (240 ml)
  • 1 cup fresh strawberries, hulled and sliced (150 g)
  • 1 oz dark chocolate (70% cocoa or higher), roughly chopped or shaved (28 g)
  • 1 tbsp honey or maple syrup (optional, 15 ml)
  • 1/2 tsp vanilla extract (2.5 ml)
  • 1 tsp chia seeds (optional, 5 g)
  • 1 tsp lemon zest

Instructions

  1. Rinse and hull the strawberries, then slice them into thin pieces. If using frozen berries, let them thaw slightly and drain any excess liquid.
  2. Place cottage cheese in a medium bowl. Use a spoon or small whisk to stir vigorously until the cottage cheese reaches a creamy, smooth texture.
  3. Stir in vanilla extract, honey or maple syrup (if using), and lemon zest. Mix well to evenly distribute flavor.
  4. Spoon the whipped cottage cheese into your serving bowl. Arrange the sliced strawberries on top in a pretty pattern.
  5. Sprinkle chopped or shaved dark chocolate over the strawberries. If desired, sprinkle chia seeds on top as well.
  6. Serve immediately or chill for 10 minutes if you prefer it cooler.

Notes

If cottage cheese is too thick, mix in a splash of milk or plant-based milk before whipping. Use frozen berries if fresh are unavailable but drain excess liquid. Finely chop or shave dark chocolate for best texture. Adjust sweetness carefully to avoid over-sweetening. Store leftovers in an airtight container in the fridge for up to 24 hours and stir gently before serving.
