  • 1 package (3 oz) strawberry-flavored gelatin (Jello or store brand)
  • 1 cup boiling water
  • 1/2 cup cold water
  • 1 cup heavy whipping cream
  • 1/4 cup powdered sugar
  • 1 teaspoon pure vanilla extract (optional)
  • 2 cups fresh strawberries, hulled and diced
  • 1 cup mini marshmallows (optional)
  • Extra sliced strawberries (for garnish)
  • Additional dollops of whipped cream (for garnish)
  • Shaved chocolate or sprinkles (optional, for garnish)

Instructions

  1. Empty the strawberry gelatin into a medium mixing bowl.
  2. Pour in boiling water and whisk until the powder dissolves completely (about 2 minutes).
  3. Add cold water and whisk again. Let cool to room temperature (about 10 minutes).
  4. While the jello cools, hull and dice the fresh strawberries into bite-sized pieces.
  5. In a large bowl, pour heavy whipping cream, add powdered sugar and vanilla extract.
  6. Beat with an electric mixer until soft peaks form (about 2-3 minutes).
  7. Slowly pour the cooled jello into the whipped cream, gently folding with a spatula until evenly pink and creamy.
  8. Add diced strawberries and mini marshmallows (if using). Fold gently until evenly distributed.
  9. Spoon the mixture into your serving dish. Cover and refrigerate for at least 1 hour (up to 4 hours for firmer fluff).
  10. Before serving, garnish with extra strawberry slices, whipped cream, or sprinkles as desired.

Notes

For best results, use cold cream and chill your bowl and beaters before whipping. Dry strawberries well to prevent sogginess. Chill the salad for at least 1 hour to set. You can substitute raspberry or cherry gelatin, use coconut whipped cream for dairy-free, and add other fruits or mix-ins for variety. If the salad is runny, chill longer or fold in more marshmallows.
