A creamy, crunchy, and nostalgic noodle dish baked on a sheet pan with a rich sesame crunch topping. Perfect for quick weeknight dinners or casual gatherings.

  • 12 oz (340 g) dried longevity noodles or spaghetti (substitute with gluten-free noodles if preferred)
  • 2 tbsp toasted sesame oil
  • Salt, to taste
  • 1 cup (240 ml) coconut milk (full-fat for creaminess; can use heavy cream if not dairy-free)
  • 3 tbsp soy sauce or tamari (for gluten-free option)
  • 1 tbsp rice vinegar
  • 2 tsp honey or maple syrup
  • 3 cloves garlic, minced
  • 1 tsp grated fresh ginger
  • 1 tbsp cornstarch mixed with 2 tbsp water
  • 1/4 cup (40 g) sesame seeds (toasted; black and white mix recommended)
  • 2 tbsp crushed roasted peanuts (optional)
  • 1 tbsp fried shallots or onions
  • 1 tsp chili flakes (optional)
  • 2 green onions, thinly sliced
  • Fresh cilantro leaves (optional)
  • Sesame oil drizzle

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Bring a large pot of salted water to a boil. Add noodles and cook for 2 minutes less than package instructions (about 6-7 minutes). Drain and toss with 2 tbsp toasted sesame oil. Set aside.
  3. In a bowl, whisk together coconut milk, soy sauce, rice vinegar, honey, minced garlic, and grated ginger. Slowly mix in the cornstarch slurry until fully combined.
  4. In a dry skillet over medium heat, toast sesame seeds until golden and fragrant, about 3-4 minutes, stirring often. Remove from heat and mix in crushed peanuts, fried shallots, and chili flakes. Set aside.
  5. Spread the oiled noodles evenly on the sheet pan. Pour the creamy sauce over the noodles and toss lightly to coat evenly, keeping noodles in a single layer.
  6. Bake for 15-18 minutes, stirring gently halfway through to prevent sticking and distribute sauce.
  7. In the last 5 minutes of baking, sprinkle the toasted sesame crunch evenly over the noodles and return to the oven.
  8. Remove from oven, garnish with sliced green onions, fresh cilantro, and a drizzle of toasted sesame oil. Serve warm.

Notes

If sauce is too thick before baking, thin with a splash of water or broth. Add extra sesame oil if noodles seem dry when tossing. Toast sesame seeds on medium heat with constant stirring to avoid burning. Use room temperature coconut milk to prevent sauce separation. Store noodles and sesame crunch separately to maintain crunchiness.
