A bubbling casserole filled with creamy sausage gravy wrapped around hearty burritos, topped with melted cheese and baked to golden perfection. Perfect for lazy weekends, potlucks, or weeknight dinners.

  • 1 pound breakfast sausage (mild or spicy)
  • 2 tablespoons all-purpose flour
  • 2 cups whole milk
  • 2 tablespoons unsalted butter
  • Salt and pepper to taste
  • 6 medium-sized flour tortillas
  • 2 cups shredded cheddar or Monterey Jack cheese
  • Optional toppings: chopped parsley, green onions, or diced tomatoes

Instructions

  1. Preheat the oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  2. In a large skillet over medium heat, cook the ground sausage until browned and crumbled, about 6-8 minutes. Remove the sausage and set aside.
  3. Melt 2 tablespoons of butter in the same skillet. Whisk in 2 tablespoons of flour and cook for 1-2 minutes. Gradually pour in 2 cups of milk, whisking constantly to prevent lumps. Bring the mixture to a simmer and cook until thickened, about 5 minutes. Season with salt and pepper to taste.
  4. Lay out the tortillas. Spoon a portion of cooked sausage onto each tortilla, then roll them up tightly and place them seam-side down in the prepared baking dish.
  5. Evenly pour the sausage gravy over the burritos, ensuring they’re fully covered.
  6. Sprinkle shredded cheese generously over the top of the casserole.
  7. Bake the casserole uncovered for 20-25 minutes, or until the cheese is melted and bubbly.
  8. Remove from the oven and let cool for 5 minutes. Garnish with parsley or green onions and serve warm.

Notes

For a gluten-free option, use gluten-free tortillas and almond flour. Add cheese inside the burritos for an extra cheesy version. Assemble the casserole the night before for convenience.
