Ingredients

  • Lasagna noodles (regular or oven-ready)
  • Canned pumpkin puree (pure pumpkin, not pumpkin pie filling)
  • Ricotta cheese (full-fat or part-skim)
  • Shredded mozzarella cheese
  • Grated Parmesan cheese
  • Heavy cream
  • Freshly minced garlic
  • Nutmeg (just a pinch)
  • Salt
  • Pepper
  • Fresh sage (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. If using regular lasagna noodles, boil them according to the package instructions until al dente. Drain and set aside.
  3. In a saucepan, combine canned pumpkin, heavy cream, minced garlic, nutmeg, salt, and pepper. Heat on medium, whisking until smooth and warm. Remove from heat.
  4. In a bowl, mix ricotta cheese, half of the Parmesan cheese, salt, and pepper. Optionally, stir in a pinch of nutmeg or chopped fresh sage.
  5. Spread a thin layer of pumpkin sauce at the bottom of a 9×13-inch baking dish. Place a layer of lasagna noodles on top, followed by a layer of the ricotta mixture, a layer of pumpkin sauce, and a sprinkle of mozzarella. Repeat layers until the dish is full, finishing with a generous layer of mozzarella and the remaining Parmesan cheese.
  6. Cover the dish with aluminum foil and bake for 25 minutes. Then remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden.
  7. Allow the lasagna to cool for about 10 minutes before slicing and serving.
