Instructions

  1. Preheat oven to 400°F (200°C). Slice the top off the garlic head to expose cloves, drizzle with olive oil, wrap tightly in foil, and roast for 35-40 minutes until golden and soft. Let cool and squeeze out cloves.
  2. Place eggs in a single layer in a large pot, cover with cold water by 1-2 inches. Bring to a boil over medium-high heat, then turn off heat, cover, and let sit for 12 minutes. Transfer eggs to an ice bath immediately.
  3. Gently crack and peel eggs. Slice in half lengthwise and remove yolks to a mixing bowl. Arrange egg whites on a serving platter or container.
  4. Add roasted garlic cloves (about 2-3 tablespoons), mayonnaise, Dijon mustard, white vinegar, salt, and pepper to yolks. Mash with fork or whisk until smooth and creamy. Adjust seasoning to taste.
  5. Transfer yolk mixture to a piping bag or zip-top bag with a corner cut off. Pipe filling into egg white halves. Alternatively, use a spoon to dollop and smooth.
  6. Cover filled eggs tightly with plastic wrap or place in an airtight container. Refrigerate for at least 8 hours or overnight to let flavors meld.
  7. Before serving, sprinkle with smoked paprika and chopped fresh chives or parsley.

Use older eggs for easier peeling. Rolling eggs gently on the counter helps crack shells evenly. If yolk mixture is too thick, add a splash of milk or cream. Piping the filling cold makes for cleaner presentation. Store leftovers in an airtight container in the fridge for up to 3 days. Avoid freezing.
