  • 2 teaspoons olive oil (divided)
  • 2 cloves garlic, minced
  • 1/4 cup honey
  • 1/4 cup Dijon mustard
  • 2 cups low sodium chicken broth
  • 1 cup heavy cream or half-and-half (can substitute coconut milk for dairy-free)
  • 4 ounces cream cheese, softened
  • 8 ounces uncooked penne or rotini pasta
  • 1/2 cup freshly grated Parmesan cheese
  • Salt and pepper, to taste
  • Fresh parsley or chives, chopped (optional, for garnish)

Instructions

  1. Prep your ingredients: Cut chicken breasts into 1-inch pieces and mince the garlic. Measure out pasta, chicken broth, honey, Dijon mustard, cream, and cream cheese.
  2. Heat 1 tablespoon olive oil over medium-high heat in a large skillet. Add chicken pieces in a single layer, season with salt and pepper, and cook until golden and no longer pink inside, about 3-4 minutes per side. Remove chicken and set aside.
  3. Lower heat to medium. Add another teaspoon of olive oil if needed. Add minced garlic and sautΓ© until fragrant but not browned, about 30-45 seconds.
  4. Pour in chicken broth, heavy cream, honey, and Dijon mustard. Stir well to combine and bring to a simmer.
  5. Add uncooked pasta to the simmering sauce. Stir gently to prevent sticking. Cover and cook, stirring occasionally, until pasta is tender and liquid mostly absorbed, about 10-12 minutes. Add small splashes of water or broth if too dry.
  6. Return cooked chicken to the pot and stir in softened cream cheese. Mix until cream cheese melts and sauce becomes silky and thick, about 3 minutes.
  7. Stir in grated Parmesan cheese. Taste and adjust salt and pepper as needed. Let sauce thicken slightly to coat pasta luxuriously.
  8. Garnish with chopped fresh parsley or chives before serving. Serve immediately for best creaminess.

Notes

If the sauce gets too thick, add a splash of broth or cream to loosen it. Watch pasta closely to avoid overcooking; al dente is ideal. Use room temperature cream cheese for smooth melting. For gluten-free, use gluten-free pasta and broth. For dairy-free, substitute cream cheese with vegan cream cheese and use coconut milk.
