  • 1 teaspoon vanilla extract

  • Sea salt (optional, a pinch)

Instructions

  1. In a medium bowl, combine 1 cup (240g) creamy peanut butter with 1/4 cup (56g) softened unsalted butter. Beat with a hand mixer or sturdy spoon until smooth and creamy, about 2-3 minutes.
  2. Gradually add 1 cup (120g) sifted powdered sugar and 1 teaspoon vanilla extract. Mix on low speed until fully incorporated and the mixture thickens slightly.
  3. Line a baking sheet with parchment paper. Scoop about 1 tablespoon (15g) of the peanut butter mixture and roll into an egg shape with your hands. Place each egg on the parchment, spacing about 1 inch apart. Continue until all mixture is used (makes roughly 20 eggs).
  4. Refrigerate the shaped eggs for at least 30 minutes to firm up.
  5. Melt 8 oz (225g) dark chocolate chips in a microwave-safe bowl in 20-second intervals, stirring between each, or melt gently over a double boiler until smooth and glossy.
  6. Using tongs or a fork, dip each chilled peanut butter egg into the melted chocolate, coating completely. Let excess drip off before placing back on the parchment-lined tray.
  7. Optionally, sprinkle a tiny pinch of sea salt on each dipped egg before the chocolate sets.
  8. Return the dipped eggs to the fridge for at least 15 minutes, or until the chocolate is firm.
  9. Serve immediately or store refrigerated in an airtight container for up to one week.

Use softened butter, not melted, for best texture. Sift powdered sugar to avoid lumps. Chill eggs properly before dipping to prevent falling apart.
