A quick and easy pasta dish featuring tender asparagus and a creamy parmesan sauce brightened with fresh lemon zest and juice. Perfect for a flavorful weeknight meal or impressing guests.

  • 8 oz (225 g) pasta (fettuccine or linguine preferred)
  • 1 lb (450 g) fresh asparagus, trimmed and cut into 2-inch pieces
  • 3 tbsp unsalted butter
  • 1 cup (100 g) freshly grated Parmesan cheese
  • 1 garlic clove, minced
  • 1 large lemon, zested and juiced
  • ½ cup (120 ml) reserved pasta water
  • Salt and freshly ground black pepper, to taste
  • Optional garnish: chopped fresh parsley or basil

Instructions

  1. Bring a large pot of salted water to a boil. Add 8 oz (225 g) of pasta and cook according to package instructions until al dente, about 8-10 minutes. Before draining, reserve ½ cup (120 ml) of the pasta cooking water. Drain the pasta and set aside.
  2. While the pasta cooks, trim and cut 1 lb (450 g) of fresh asparagus into 2-inch pieces. Heat 1 tbsp of butter in a large skillet over medium heat. Add the asparagus and sauté for 3-4 minutes until tender-crisp and bright green. Remove the asparagus from the skillet and set aside.
  3. In the same skillet, melt 2 tbsp butter over low heat. Add 1 minced garlic clove and cook gently for 1 minute until fragrant, avoiding browning. Gradually stir in 1 cup (100 g) of freshly grated parmesan cheese, mixing constantly to create a smooth sauce.
  4. Add the cooked pasta and asparagus back into the skillet with the parmesan sauce. Slowly add reserved pasta water a little at a time, stirring continuously to loosen the sauce and help it coat the pasta evenly until silky and creamy.
  5. Remove the skillet from heat. Stir in the zest and juice of 1 large lemon. Season with salt and freshly ground black pepper to taste. Toss everything well to combine.
  6. Plate the pasta immediately for best texture and warmth. Garnish with chopped fresh parsley or basil if desired.

Notes

Add reserved pasta water gradually to achieve a silky sauce consistency. Avoid overcooking asparagus to keep it tender-crisp and bright green. Use freshly grated parmesan for best flavor and texture. If sauce is too thick, add more pasta water; if too thin, add extra parmesan. For vegan or gluten-free versions, substitute ingredients accordingly.
