  • 1/2 cup unsalted butter, softened
  • 1 1/2 cups heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 2 cloves garlic, minced
  • Salt, to taste

  • Fresh parsley, optional for garnish

Instructions

  1. Boil a large pot of salted water and cook 12 oz of fettuccine according to package instructions until al dente (8-10 minutes).
  2. In a large skillet, melt 1/2 cup of unsalted butter over medium heat. Add 2 minced garlic cloves and sauté for about 1 minute until fragrant.
  3. Lower the heat and slowly pour in 1 1/2 cups of heavy cream. Whisk gently to combine and bring to a simmer. Cook for 3-4 minutes to thicken slightly.
  4. Gradually add 1 cup of freshly grated Parmesan cheese to the sauce, whisking constantly to ensure it melts smoothly. Keep the heat low to prevent the sauce from separating.
  5. Drain the cooked pasta, reserving about 1/2 cup of the pasta water. Add the fettuccine to the skillet with the sauce and toss to coat. Add reserved pasta water if the sauce is too thick.
  6. Season with salt and freshly cracked black pepper to taste. Toss again to combine evenly.
  7. Transfer to serving plates, garnish with fresh parsley, and serve immediately while warm.
