Creamy Classic Potato Salad Recipe Easy Homemade Dill and Mustard

A creamy and tangy potato salad featuring fresh dill and Dijon mustard, perfect for summer BBQs and potlucks. This easy recipe combines tender potatoes with a smooth dressing and fresh herbs for a refreshing side dish.

  • 2 pounds (900g) Yukon Gold or red potatoes, scrubbed and cut into bite-sized pieces
  • ¾ cup (180ml) mayonnaise
  • ¼ cup (60ml) sour cream
  • 2 tablespoons Dijon mustard
  • 2 tablespoons fresh dill, finely chopped
  • ¼ cup red onion, finely diced
  • ½ cup celery, finely chopped (optional)
  • 1 tablespoon apple cider vinegar
  • Salt and black pepper to taste
  • 2 large hard-boiled eggs, chopped (optional)

Instructions

  1. Place the cut potatoes in a large pot and cover with cold water by about an inch. Add a pinch of salt. Bring to a boil over high heat, then reduce to medium and simmer for 12-15 minutes, or until potatoes are fork-tender but not falling apart.
  2. Drain the potatoes in a colander and let them cool for about 10 minutes until warm but not hot.
  3. In a medium bowl, combine mayonnaise, sour cream, Dijon mustard, apple cider vinegar, and salt and pepper to taste. Whisk until smooth and creamy.
  4. Finely dice red onion and celery (if using). Chop fresh dill and hard-boiled eggs (if using).
  5. Gently fold the warm potatoes into the dressing mixture. Add onions, celery, dill, and eggs. Mix carefully to coat all the potatoes without mashing them.
  6. Taste and adjust seasoning with more salt, pepper, or vinegar if desired.
  7. Cover and refrigerate for at least 1 hour before serving to let flavors marry.

Notes

Use waxy potatoes like Yukon Gold or red potatoes to keep the salad from becoming mushy. Start boiling potatoes in cold water for even cooking. Mix potatoes with dressing while still warm for better flavor absorption. Soak onions in cold water for 10 minutes if you want to reduce sharpness. Gently fold ingredients to keep potato chunks intact. Chill at least 1 hour before serving; overnight is best for flavor.
