  • 3 cups cooked chicken, shredded or diced (rotisserie recommended)
  • 1 can (10.5 oz) cream of chicken soup
  • 1/2 cup sour cream (or Greek yogurt for lighter version)
  • 1/2 cup milk
  • 1/2 teaspoon dried sage
  • 1/2 teaspoon garlic powder
  • Salt & pepper to taste (start with 1/4 teaspoon each)
  • 1 box (6 oz) stuffing mix
  • 1 1/2 cups chicken broth or water
  • 4 tablespoons unsalted butter, melted
  • 1 cup frozen mixed vegetables, thawed (optional)
  • 1/2 cup shredded cheddar cheese (optional)
  • Fresh parsley or thyme, chopped (optional, for garnish)

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish with butter or non-stick spray.
  2. In a medium bowl, combine stuffing mix with chicken broth (or water) and melted butter. Stir until just moistened and let sit.
  3. In a separate bowl, whisk together cream of chicken soup, sour cream, and milk until smooth. Add sage, garlic powder, salt, and pepper. Stir in shredded chicken and any optional vegetables.
  4. Spread the creamy chicken mixture evenly in the prepared baking dish.
  5. Fluff the stuffing mixture with a fork and gently spoon it over the chicken layer. Do not press down.
  6. Cover the dish with foil and bake for 25 minutes.
  7. Remove foil and bake another 15-20 minutes, until stuffing is golden brown and slightly crisp. If using cheese, sprinkle on top in the last 5 minutes.
  8. Check for doneness: casserole should be bubbling at the edges and have a golden top.
  9. Let casserole rest for 5-10 minutes before serving. Garnish with fresh herbs if desired.

Notes

For gluten-free, use GF stuffing mix or substitute cooked rice/quinoa. For vegetarian, use sautéed mushrooms/spinach and cream of mushroom soup. Add extra veggies for nutrition. Let casserole rest before serving for best texture. Adjust salt if stuffing mix is salty. Garnish with fresh herbs for color.
