Creamy Blackberry Fool - featured image

A quick and easy dessert featuring luscious whipped cream and vibrant blackberry puree, perfect for any occasion.

Ingredients

Scale
  • 2 cups (300 grams) blackberries, fresh or thawed if frozen
  • 2 tablespoons (30 grams) granulated sugar
  • 1 cup (240 ml) heavy cream, chilled
  • 2 tablespoons (15 grams) powdered sugar
  • 1 teaspoon (5 ml) vanilla extract

Instructions

  1. Add the blackberries and granulated sugar to a blender or food processor. Blend until smooth. For a seedless puree, press the mixture through a fine mesh sieve into a bowl.
  2. In a chilled mixing bowl, pour in heavy cream and add powdered sugar and vanilla extract. Using a hand mixer or stand mixer, whip until soft peaks form.
  3. In serving glasses, alternate dollops of whipped cream and blackberry puree. Use a spatula or spoon to create swirls for a marbled effect. Repeat until the glasses are full.

Notes

[‘Chill your mixing bowl and beaters in the freezer for 10-15 minutes before whipping the cream.’, ‘Taste your blackberry puree and adjust the sugar to balance tartness.’, ‘Prep the dessert a few hours ahead to let the flavors meld together.’]
