  • 1 cup (100g) fresh or frozen cranberries (coarsely chopped)
  • 1/3 cup (40g) all-purpose flour (for streusel topping)
  • 1/3 cup (70g) granulated sugar (for streusel topping)
  • 1/4 cup (56g) unsalted butter, melted (for streusel topping)
  • 1/2 teaspoon ground cinnamon (for streusel topping)

Instructions

  1. Preheat the oven to 375Β°F (190Β°C) and line a muffin tin with paper liners or lightly grease it.
  2. In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, and salt.
  3. In a medium bowl, whisk together the vegetable oil, eggs, Greek yogurt, orange juice, and orange zest until smooth.
  4. Gradually add the wet mixture to the dry ingredients, stirring gently with a spatula until just combined. Avoid overmixing.
  5. Fold in the chopped cranberries gently to distribute them evenly throughout the batter.
  6. In a small bowl, combine the flour, sugar, melted butter, and cinnamon for the streusel topping. Mix until crumbly.
  7. Divide the batter evenly among the muffin cups, filling each about 3/4 full. Sprinkle the streusel topping generously over each muffin.
  8. Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the muffins cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.
