  • 1 tablespoon chia seeds
  • 1 teaspoon vanilla extract
  • 2 tablespoons unsalted butter (Kerrygold or Plugrá recommended)
  • 1 clove fresh garlic, minced finely
  • Pinch of salt
  • Optional toppings: fresh berries, chopped nuts, sprinkle of cinnamon

Instructions

  1. In a medium bowl, combine 1 cup (90g) rolled oats, 1 tablespoon chia seeds, and a pinch of salt. Stir to mix evenly.
  2. Add 1 cup (240ml) milk and ½ cup (120g) Greek yogurt. Drizzle 2 tablespoons maple syrup and 1 teaspoon vanilla extract over the mixture.
  3. Whisk or fork stir gently but thoroughly until the mixture is creamy and slightly thick. Add a splash more milk if too dry.
  4. Transfer the oat mixture into a mason jar or airtight container. Seal tightly and refrigerate overnight or for at least 6 hours.
  5. About 10 minutes before serving, melt 2 tablespoons unsalted butter in a small saucepan over low heat. Add 1 finely minced garlic clove and a pinch of salt. Stir constantly for 2-3 minutes until fragrant but not browned.
  6. Remove from heat and let the garlic butter cool slightly until thickened but still pourable.
  7. Spoon the sticky overnight oats into bowls and drizzle the warm garlic butter generously over the top. Add optional toppings if desired.
  8. Serve immediately and enjoy the contrast of cold creamy oats with warm savory garlic butter.
