This Cozy One Pot Lasagna Soup is rich, comforting, and ridiculously easy to make—all the flavors of classic lasagna in a single pot. Perfect for busy weeknights or cozy family dinners.

  • 1 pound ground beef or Italian sausage
  • 1 tablespoon olive oil
  • 1 cup finely chopped onion
  • 3 cloves garlic, minced
  • 4 cups chicken or beef broth
  • 1 can (28 ounces) crushed tomatoes
  • 2 tablespoons tomato paste
  • 2 teaspoons Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 810 lasagna noodles, broken into bite-sized pieces
  • Ricotta cheese, for topping
  • Shredded mozzarella, for topping
  • Fresh parsley, optional for garnish

Instructions

  1. Heat 1 tablespoon of olive oil in a large pot over medium heat. Add 1 pound of ground beef or Italian sausage and cook until browned, breaking it up with a wooden spoon (about 5-7 minutes).
  2. Stir in 1 cup of finely chopped onion and 3 cloves of minced garlic. Cook for 2-3 minutes until fragrant.
  3. Add 4 cups of chicken or beef broth, 1 can (28 ounces) of crushed tomatoes, and 2 tablespoons of tomato paste to the pot. Stir well to combine.
  4. Season with 2 teaspoons of Italian seasoning, 1 teaspoon of salt, and 1/2 teaspoon of black pepper.
  5. Bring the mixture to a boil, then reduce the heat to simmer. Let it cook for 10 minutes, stirring occasionally.
  6. Break 8-10 lasagna noodles into bite-sized pieces and add them to the pot. Stir and cook for 8-10 minutes until the noodles are tender.
  7. Check the consistency of the soup. If it’s too thick, add a bit more broth or water to thin it out.
  8. Once the noodles are cooked, remove the pot from heat. Ladle the soup into bowls and top with a dollop of ricotta cheese and a sprinkle of shredded mozzarella.
  9. Garnish with fresh parsley if desired. Serve warm and enjoy!
