  • 1 cup cooked jasmine rice or brown rice (about 180g cooked)
  • 1 cup steamed or roasted baby bok choy, chopped
  • 1/2 cup shredded carrots (fresh or frozen)
  • 1/2 cup sliced shiitake mushrooms (fresh or dried, rehydrated)
  • 4 large eggs, room temperature
  • 2 tablespoons white miso paste
  • 1 tablespoon toasted sesame oil
  • 1 tablespoon rice vinegar
  • 1 teaspoon soy sauce or tamari
  • 1 teaspoon honey or maple syrup (optional)
  • 1 teaspoon grated fresh ginger
  • 1 garlic clove, minced
  • 1 tablespoon toasted sesame seeds
  • 2 scallions, thinly sliced
  • Optional: chili flakes or nori strips for garnish

Instructions

  1. Cook 1 cup of jasmine or brown rice according to package instructions (about 15-20 minutes). Fluff and set aside to keep warm.
  2. Steam or roast the bok choy until just tender (about 4-5 minutes steaming).
  3. Sauté sliced shiitake mushrooms in a little oil over medium heat until soft and fragrant, about 5 minutes. Set aside.
  4. Bring a medium pot of water to a gentle boil. Carefully lower 4 large eggs into the water using a slotted spoon. Boil for exactly 6 minutes for perfectly soft yolks.
  5. Immediately transfer eggs to an ice bath for 5 minutes to stop cooking and make peeling easier.
  6. In a small bowl, whisk together 2 tablespoons white miso paste, 1 tablespoon toasted sesame oil, 1 tablespoon rice vinegar, 1 teaspoon soy sauce, 1 teaspoon honey, 1 teaspoon grated ginger, and 1 minced garlic clove until smooth and creamy.
  7. Gently tap each egg on the counter and peel under running water to remove shells without breaking the soft whites.
  8. Divide the cooked rice into four bowls. Arrange the steamed bok choy, sautéed mushrooms, and shredded carrots around the rice. Halve the soft-boiled eggs and nestle them on top.
  9. Drizzle the miso-sesame dressing generously over each bowl. Sprinkle with toasted sesame seeds, sliced scallions, and chili flakes or nori strips if using.
  10. Serve immediately and enjoy warm.

Notes

Use room temperature eggs to prevent cracking. Plunge eggs into an ice bath immediately after boiling to stop cooking and ease peeling. If miso paste is thick, add a splash of warm water to loosen it. Store dressing separately from rice and veggies for best freshness. For vegan variation, replace eggs with pan-fried tofu and use maple syrup instead of honey.
