A velvety and comforting potato soup with rich, buttery potatoes and savory herbs, perfect for chilly evenings and family gatherings.

Ingredients

Scale
  • 4 large Russet potatoes, peeled and diced
  • 2 tablespoons unsalted butter
  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth (or vegetable broth for vegetarian version)
  • 1 cup heavy cream
  • 1 cup milk (whole milk or dairy-free alternative)
  • 2 tablespoons all-purpose flour
  • Salt and black pepper to taste
  • Optional toppings: shredded cheddar cheese, crumbled bacon, chopped green onions, sour cream

Instructions

  1. Peel and dice the potatoes into 1-inch cubes. Dice the onion and mince the garlic. Set everything aside.
  2. In a large pot, melt the butter over medium heat. Add the diced onion and cook until translucent, about 5 minutes. Stir in the garlic and cook for another minute or until fragrant.
  3. Add the diced potatoes to the pot and pour in the chicken broth. Bring the mixture to a boil, then reduce the heat to medium-low and let it simmer for 15-20 minutes, or until the potatoes are tender.
  4. In a small bowl, whisk together the flour and milk until smooth. Slowly pour this mixture into the pot, stirring constantly to avoid lumps.
  5. Stir in the heavy cream and continue cooking for another 5 minutes, letting the soup thicken slightly.
  6. Season with salt and black pepper to taste. Taste and adjust as needed.
  7. Optional: For a smoother texture, use an immersion blender to puree the soup. Alternatively, mash the potatoes lightly with a potato masher for a chunkier consistency.
  8. Ladle the soup into bowls and serve hot with your favorite toppings—cheddar cheese, bacon, green onions, or sour cream.

Notes

[‘Let the potatoes simmer gently for better flavor and texture.’, ‘Avoid over-blending to maintain some texture in the soup.’, ‘Season gradually and taste as you go to avoid over-salting.’, ‘Prep ingredients ahead of time to save cooking time.’, ‘If the soup is too thick, add a splash of broth or milk to thin it out.’]
