  • 2 large eggs, room temperature

  • 8 oz cream cheese (225 g), softened
  • ½ cup ricotta cheese (125 g)
  • 1 whole bulb roasted garlic cloves (about 1012 cloves), roasted until golden and soft
  • ¼ cup Parmesan cheese (25 g), freshly grated
  • 1 tsp fresh thyme leaves (optional)
  • Salt and black pepper to taste
  • 1 cup powdered sugar (120 g), sifted
  • 23 tbsp whole milk (3045 ml)
  • ½ tsp vanilla extract

Instructions

  1. Preheat oven to 400°F (200°C). Slice the top off a whole garlic bulb, drizzle with olive oil, wrap in foil, and roast for 30-35 minutes until golden and soft. Let cool and mash cloves.
  2. In a large bowl, whisk together flour, sugar, yeast, and salt. Warm milk until about 100°F (38°C), then stir in melted butter, eggs, and vanilla extract.
  3. Pour wet ingredients into dry and mix until shaggy dough forms. Knead by hand for 8-10 minutes or with stand mixer for 5-6 minutes until smooth and elastic. Add flour if sticky.
  4. Lightly oil a bowl, place dough inside, cover, and let rise in a warm spot for 60-75 minutes until doubled in size.
  5. In a medium bowl, beat cream cheese and ricotta. Mash in roasted garlic, Parmesan, thyme, salt, and pepper. Mix until creamy.
  6. Punch down dough and roll into a 12×15 inch rectangle. Spread cheese filling evenly, leaving 1-inch border. Roll tightly into a log.
  7. Pinch ends to seal and form a ring on parchment-lined baking sheet. Cover and let rise 30-40 minutes until puffed.
  8. Preheat oven to 350°F (175°C). Bake for 30-35 minutes until golden brown. Tent with foil if browning too fast. Cool slightly.
  9. Whisk powdered sugar, milk, and vanilla until smooth. Drizzle glaze over warm cake and let set before slicing.
