Cozy Beef Stew Recipe with Thick Gravy – Easy & Perfect

A hearty and comforting beef stew with tender meat, rich gravy, and wholesome vegetables, perfect for chilly nights or family dinners.

  • 1.5 lbs beef chuck, cut into 1-inch cubes
  • 1/4 cup all-purpose flour
  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 3 carrots, cut into rounds
  • 3 medium potatoes, peeled and diced
  • 4 cups beef broth (low-sodium)
  • 2 tbsp tomato paste
  • 1 tbsp Worcestershire sauce
  • 2 bay leaves
  • 3 sprigs fresh thyme
  • Salt and pepper to taste

Instructions

  1. Pat the beef cubes dry with paper towels and season generously with salt and pepper.
  2. Dredge the beef in flour, shaking off any excess.
  3. Heat olive oil in a large Dutch oven over medium-high heat. Sear the beef in batches until browned on all sides, about 3-4 minutes per batch. Remove and set aside.
  4. Add the chopped onions to the pot and sautΓ© for 5 minutes until softened. Stir in the garlic and cook for an additional minute.
  5. Return the beef to the pot and add the tomato paste, stirring to coat the meat evenly.
  6. Pour in the beef broth and Worcestershire sauce, scraping the bottom of the pot to deglaze and incorporate all the flavorful bits. Add the bay leaves and thyme.
  7. Bring the stew to a gentle boil, then reduce the heat to low and cover. Let it simmer for about 1.5 to 2 hours, stirring occasionally.
  8. Add the carrots and potatoes to the pot and continue cooking for another 30 minutes, or until the vegetables are tender.
  9. Remove the bay leaves and thyme sprigs before serving. Taste and adjust seasoning as needed.
  10. If the gravy isn’t thick enough, mix 1 tablespoon of flour with a bit of water to form a slurry, then stir it into the stew and simmer for 5 minutes.

Notes

For a gluten-free version, substitute all-purpose flour with a gluten-free flour blend. Add a splash of red wine during deglazing for extra flavor.
