Instructions

  1. Preheat oven to 400°F (205°C). Slice the top off the garlic head to expose cloves, drizzle with olive oil, sprinkle with salt, wrap tightly in foil, and roast for 35-40 minutes until soft and golden. Let cool.
  2. In a large bowl, combine warm milk (110°F/43°C), sugar, and yeast. Stir gently and let sit for 5-10 minutes until foamy.
  3. In a separate bowl, whisk together flour and salt.
  4. Add eggs and browned butter (cooled but still liquid) to the yeast mixture. Slowly add flour mixture, stirring until a shaggy dough forms.
  5. Knead the dough on a lightly floured surface for 8-10 minutes until smooth and elastic, or use a stand mixer with a dough hook for 6-7 minutes. Adjust flour or milk as needed for consistency.
  6. Place dough in a greased bowl, cover with a towel or plastic wrap, and let rise in a warm spot for 1 to 1 ½ hours until doubled in size.
  7. Partially cook bacon slices in a skillet over medium heat for 3-4 minutes until starting to crisp but still pliable. Drain on paper towels.
  8. Punch down the risen dough and divide into 12 equal pieces (about 2 ounces / 56g each). Roll each piece into a smooth ball.
  9. Wrap one bacon slice around each dough ball, tucking the ends underneath to secure.
