  • 1 can (15 oz) creamed corn
  • 1 cup sour cream (full-fat preferred, or Greek yogurt)
  • 1/2 cup unsalted butter, melted
  • 2 large eggs, room temperature, whisked until frothy
  • 1 box (8.5 oz) corn muffin mix (such as Jiffy)
  • 1/4 cup granulated sugar (optional)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/3 cup crushed Ritz crackers or panko breadcrumbs
  • 2 tbsp unsalted butter, melted (for topping)
  • 2 tbsp grated Parmesan cheese (optional, for topping)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch casserole dish with cooking spray or butter.
  2. In a large mixing bowl, whisk eggs until frothy and pale, about 2 minutes. Add melted butter and sour cream, whisk until smooth.
  3. Stir in whole kernel corn and creamed corn. Mix gently to combine.
  4. Sprinkle in corn muffin mix, sugar (if using), salt, and pepper. Fold together with a spatula until just combined; do not overmix.
  5. Scrape batter into prepared casserole dish and spread evenly. Tap pan gently to release air bubbles.
  6. In a small bowl, mix crushed crackers or breadcrumbs with melted butter and Parmesan (if using). Sprinkle evenly over casserole and press lightly.
  7. Bake uncovered for 40–45 minutes, until center is set and top is golden brown. If top browns too quickly, tent with foil during last 10 minutes.
  8. Remove from oven and let cool for at least 10 minutes before slicing and serving.

For gluten-free, use a gluten-free corn muffin mix. For dairy-free, substitute coconut yogurt and plant-based butter. Whisk eggs well for fluffiness and avoid overmixing.
