  • 46 chicken thighs (bone-in or boneless, skin-on)
  • 1/3 cup Thai sweet chili sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 2 tablespoons vegetable oil
  • 2 green onions, thinly sliced (optional)
  • 1 tablespoon sesame seeds, toasted (optional)

Instructions

  1. Mince the garlic, grate the ginger, and slice the green onions. Set aside.
  2. Lightly salt and pepper the chicken thighs on both sides.
  3. Heat vegetable oil in a large skillet over medium-high heat. Add the chicken thighs (skin-side down if using skin-on) and cook for 5–7 minutes, until golden and crispy.
  4. Turn the chicken over and cook for another 5–7 minutes, until fully cooked (internal temperature should reach 165Β°F/74Β°C).
  5. In a small bowl, mix Thai sweet chili sauce, soy sauce, rice vinegar, garlic, and ginger.
  6. Reduce the skillet heat to low and pour the sauce over the chicken. Toss to coat evenly, allowing the sauce to thicken and caramelize for about 3 minutes.
  7. Sprinkle with green onions and sesame seeds. Serve hot with rice or vegetables.

Notes

Use skin-on chicken thighs for extra crispiness. Keep the heat low when caramelizing the sauce to prevent burning. Prep garlic and ginger ahead of time to save time during cooking.
